Lechon is a Christmas specialty in many different countries, but it is especially important in Puerto Rico. The roast suckling pig dish is prepared on a spit and can take quite a long time to prepare — hence why it’s especially popular for special meals like Christmas. The pig is roasted on full display and is often everyone's favorite part of the Christmas holiday.
