It is cold in New Jersey! Warm up with hearty food and good company as this wacky cruise ship voyages to the islands of Trinidad and Tobago!

Trinidad is the larger and more populous of the two major islands that make up the island nation of Trinidad and Tobago. Although part of the South American continent, it is generally referred to as the southernmost island in the Caribbean.

Trinidad is popular for its savory food options. "Trini" food is diverse, and is influenced by many different styles, such as Indian, African, Creole, Spanish, Chinese, Lebanese and more. Over time it has been adapted and changed to what is known as Trinidadian food today. The most popular Trinidadian dishes include pelau, doubles, pholourie, and roti.

Roti is a flat unleavened bread eaten widely across in the West Indies. Originally brought to the islands by indentured laborers from South Asia, roti has become a popular staple in the culturally rich cuisines of Trinidad and Tobago. The "roti wrap" is the fast-food commercialization of roti and curry together that originated in Southern Trinidad. Various wrapped roti include chicken, goat, beef and shrimp. Vegetables such as potato, pumpkin and spinach as well a variety of condiments can also be added. Dhalpuri is a roti with a stuffing of ground yellow split peas, cumin, garlic, and pepper.

Paratha is a layered roti made with clarified butter, then cooked on a round, flat metal griddle. This gives the roti a crisp outside and small patches of light browning. When it is almost finished cooking, the cook begins to beat the roti while it is on the griddle causing it to become light and flaky. Paratha roti is more rich and flavorful than plain roti. Paratha roti is colloquially called "Buss up Shot" (Busted up Shirt) because the roti resembles a tattered and torn up shirt.
