Given the name, one should expect their signature dish to be ribs, and they offer both baby backs and St. Louis-style. Pick your sauce from their regular rub, Sweet and Sticky Oklahoma-style, Citrus Chipotle, Rib Cribbean (think Caribbean spices), Asian Fusion (Asian spices), and Spicy Carolina (a vinegar and mustard sauce which is going to be an oddball for many in this part of the country). If ribs aren't your thing, you've got other options, like chicken-fried steak, fried catfish or shrimp, or other barbecue meats like sausage, hot links, brisket, chicken breast, pulled pork, turkey, and even bologna.
