Paisano's is amazing - absolutely the best GF dining experience I have ever had. The owner of the restaurant has Celiac Disease, and all but only 5 or 6 items on the menu are gluten free or can be made that way. That means the entire menu, including appetizers and dessert, even lasagne! They are meticulous about avoiding cross-contamination.
They stand out from the very first moment. When we walked in, they asked whether we needed a GF menu, as though it was an ordinary thing. Light fluffy toasty gluten free garlic bread appears at your table - my husband kept breaking off pieces of it because it was better than the regular bread. Many, many items on the menu are things you ordinarily never see available gluten free in a restaurant, and they are all wonderful. You can completely relax and trust them to take care of you.
A restaurant that has excellent food and enables you to dine worry free is a rare find. Paisano's is a jewel and a dining opportunity not to be missed if you are in Albuquerque.
