Igennem mange hundrede år har man udvundet sydesalt af det saltholdige grundvand på Rønnerne på den sydlige del af Læsø. Grundvandet har et indhold på 12-16% salt. Det skyldes at den lavtliggende del af øen oversvømmes af havvand som sidenhen fordamper, hvorved saltet opkoncentreres i grundvandet. De store mængder brænde, der skulle bruges til inddampning af sydesaltet betød at øen i midten af 1600- tallet var stod næsten helt uden træer. Saltsydningen blev herefter forbudt ved lov. I 1900-tallet begyndte man at beplante Læsø igen. I 1990 genoptog man traditionen med at fremstille sydesalt. Dels som forskning og dels som en turistattraktion. Idag udgør fremstilling af sydesaltet en vigtig del af øens industri.

For many hundred years salt has been extracted from the groundwater at the Rønnerne on the Southern part of the little island Læsø. The groundwater has a contents up to 12-16% salt due to the seawater which flood the ground and later evaporates leaving the salt in the ground. The huge amounts of firewood used in the production of salt allmost wiped out the trees on the island in the middle of the 1600'th century and salt production became banned by law. In the 1900'th century plantation on the island began. In 1990 the production of salt started as a combination of sciense and tourism. Today the salt production is an important part of the industry of the island.
