Carlos O'Kelly's Mexican Cafe is a regional tex-mex restaurant chain across the midwestern United States. The name (although made-up) is inspired by Irish immigrants who settled around Arizona and New Mexico and married the locals. By the turn of the century there were many Mexican/Irish names around the area.
