St. Albert Cheese is a coop of 60 farmers who contribute milk for the production of their cheese. The company is primarily know for their cheddar cheeses, plain and flavoured but they do make other deli style cheeses as well. The Coop was founded at the end of the 1800s. If you are in the Ottawa area, look for the curds sitting out on store counters - they are delivered daily and they are still squeeky.
