A factory tour where you get to learn the history of the New Mexico pistachio industry, learn the difference between a male and female pistachio, understanding that while the rest of the world grows pistachios as a shrub, here we grow them as small tree. You get to tour the receiving, cleaning and sorting building, viewing the final intensive hand sorting operation which helps you understand why pistachios are so expensive.
The highlight of the tour is the roasting building, where the smell will have you practically drooling. You see the mixers where the different flavors are added to the nuts in the shell, and the ovens where the pistachios are roasted. If you're lucky you may get a special sample direct from the roasting pan.
Then its off to the packaging room, then the cold storage are, pistachios are also stored at low temperatures to keep them fresh, and lastly to the shipping department. At the end of the tour you receive a small complimentary bag of pistachios and an invitation to shop in their gift shop. In all it is an excellent 45 minute tour that gives a better appreciation of the nut that comes with its shell already cracked.
Tours are given twice daily Mon - Fri from June thru August at 10 & 1:30. The rest of the year the tour is Mon - Fri at 1:30.
