In 1907, Valentin Elsässer and his wife Eva Rosina bought the current main building in Frankfurt Alt-Sachsenhausen. At the beginning of the century, the "Graue Bock" was a pub frequented by carters, craftsmen, cattle dealers and butchers from the nearby slaughterhouse.
In addition to the pub sign, the pub's emblem, the grey buck, is displayed in several places on the exterior.
