Collected from Wet feet (GC1D890) in Surrey.
My stepsons first find, so I thought I'd share his favourite dessert;
Lemon Meringue Pie:
I cheat and buy a ready made pie case - I hate making pastry!
Filling; 1 oz cornflour, juice of 2 lemons + water to make 1/2 pint, 4 oz caster sugar, 2 egg yolks.
Add a little of the lemon + water mix to the cornflour and make into a paste. Pour into a saucepan and add rest of lemon and water . Add the sugar. Warm slowly until the mixture turns opaque. Leave to cool, but do not allow to set. Beat in the eg yolks. Pie into pie case.
Meringue: 2 egg whites, 4oz caster sugar.
Whisk the egg whites until very stiff (I like to ask my stepson to turn the bowl upside down, if its ready the mix will stay in the bowl, if not it will fall on the floor - please note, not a good idea to shake the bowl when upside down!). Add the sugar a spoonful at a time, whisking well after each addition until the mixture is thick. Spoon the mixture onto of the pie filling, covering all the filling.
Cook on a low oven for about an hour.
