O Bisalhães [Vila Real]

[PT] Sou um TB que estou a disputar uma corrida de TB's em Portugal. Represento o Distrito de Vila Real e peço, a quem me encontrar, que não me leve além das fronteiras portuguesas. O meu propósito é passear por todos os Distritos de Portugal e conhecer os locais mais encantadores do nosso lindo País. [PT] Uma das singularidades da olaria de Bisalhães é a cor negra das louças. O segredo está no forno e nos métodos de cozedura. “O forno é um buraco aberto na terra. Colocam-se as peças numa grelha e introduz-se na abertura. Por baixo, fica a lenha a crepitar. Para que os artigos cozam totalmente, põe-se, por cima da louça, uma camada de rama de pinheiro verde a arder.” Para impedir a libertação de fumos, o forno artesanal é abafado com uma camada de caruma, musgo e terra. Aqui reside o segredo. “Se não se abafasse, a louça ficava vermelha”. Para o sucesso da cozedura são necessárias cerca de 24 horas. As características da louça de Bisalhães permitem restabelecer os sabores tradicionais da cozinha portuguesa, na medida em que os seus materiais naturais (nem se utiliza o vidrado nem a pintura) não interferem no paladar dos alimentos.

[EN] One of the singularities of the Bisalhães' pottery is the black color of the dishes. The secret lies in the oven and cooking methods. The oven is a hole in the ground.
