Enjoy delicious food and good company as this wacky cruise ship voyages through the Strait of Gibraltar and around the Atlantic Ocean to the West Africa country of Liberia!

The Republic of Liberia began as a settlement of the American Colonization Society, who believed blacks would face better chances for freedom in Africa than in the United States. Between 1821 and the American Civil War, more than 15,000 freed and free-born blacks relocated to the settlement. The Liberian constitution and flag were modeled after those of the United States.

Much of the culture and foods from Liberia are adapted from African American culture. Liberian cuisine has been influenced by contact, trade and colonization from the United States, especially by food and dishes from the American South (Southern - aka. "Soul" Food).

Liberian cuisine reflects the rich heritage of Liberians and contains an interesting melange of ingredients. Cassava, peppers, sweet potatoes, tomatoes, ginger, palm oil and tasty vegetables are often found in Liberian dishes.

Rice is a staple of the Liberia diet, whether commercial or country ("swamp rice"), and either served "dry" (without a sauce), with stew or soup poured over it, or cooked into the classic jollof rice. Liberia also has a tradition of baking that was imported from the United States and is unique in West Africa.
