Die Stieleiche ist ein 20 bis 40 Meter hoher Baum und erreicht einen Stammdurchmesser bis drei Meter, im Freistand bis zu 8 Meter. Ihr Höchstalter liegt bei 500 bis 1000 Jahren, in Ausnahmefällen bis zu 1400 Jahren. Sie blüht von April bis Mai, die Eicheln reifen von September bis Oktober.
