Située à l'origine à l'extérieur des remparts de la cité, Notre-Dame-en-Vaux a été construite sur une zone marécageuse où se rejoignaient trois cours d'eau dont il ne reste que le Mau. Elle n'est intégrée dans l'enceinte qu'au XIIIe siècle.

Une chapelle dédiée à la Vierge est mentionnée en 850 parmi les biens du chapitre de la cathédrale. C'est la première référence à Notre-Dame en Vaux. Elle était alors située en dehors de la ville. En 1107, la chapelle devient une église paroissiale. En 1114, les 6 chanoines qui administrent Notre Dame en Vaux demandent leur indépendance vis-à-vis du chapitre de la cathédrale. En 1157, des miracles se produisent lors de la reconstruction de l'église qui s'était effondrée. Une bulle papale permet, quelques années plus tard, l'accroissement du nombre de chanoines. 

La reconstruction de l'église est probablement achevée en 1183 (date de sa bénédiction). La dédicace a lieu en 1322. Les chanoines sont chassés en 1790 et 3 flèches sont détruites pendant la Révolution pour récupérer le plomb (Sous l’influence de l’abbé Champenois, une flèche sera reconstruite en 1833). L'église est réouverte en tant que paroissiale en 1795.

En 1844, la collégiale Notre-Dame-en-Vaux est inscrite au patrimoine mondial de l'Unesco au titre des chemins de St Jacques de Compostelle. Elle possède l'un des plus importants carillons d'Europe, 56 cloches ainsi que d'admirables verrières du XVIe siècle.

L’emplacement du cloitre aménagé en jardin

Un cloître était accolé à la façade nord de l'église de Notre-Dame-en-Vaux. Il a été édifié dans les années 1170-80. Détruit en 1759 et 1766 par les chanoines et les paroissiens qui ne voulaient plus payer les réparations, il tombe dans l'oubli pendant deux siècles. Les fouilles entreprises par Léon Pressouyre entre 1963 et 1976 permettent de redécouvrir et mettre au jour les trois quarts des éléments du cloître. Elles révèlent un édifice d'une exceptionnelle richesse iconographique et d'une grande somptuosité décorative qui constitue un monument majeur de l'histoire de la sculpture à cette époque de transition entre Roman et Gothique. Les statues-colonnes, chapiteaux décoratifs et historiés, corniches et piliers qui formaient cet ensemble unique sont aujourd'hui présentés dans un musée spécialement pour les accueillir à proximité immédiate de l'aire de l'ancien cloître.

A cloister was attached to the north side of the Church of Notre Dame en Vaux. It was built in 1170-80 years.
