Co jsou vlastně tvarůžky
Olomoucké tvarůžky, místní je také označují, jako syrečky, nebo tvargle. Označení tvargle pochází z Německého názvu Olmützer Quargel. Jedná se o moravský sýr, vyráběný z odtučněného tvarohu. Tvarůžek je nezaměnitelný díky velmi specifické vůni, chuti a zlato-žlutou barvou. Povrch je zlatavý a mazlavý, vnitřek má světlejší barvu a měkkou konzistenci. Název tvarůžky má původ v tvarohu, který je jednou ze surovin na jejich výrobu.
Jak se vyrábějí
Tradičně tvarůžky vyráběly ženy, které se označovaly jako pleskačky a využívaly dřevěných nástrojů, tzv. klapaček, které dávaly tvarůžkům tvar koleček. Princip výroby se dodnes nezměnil, jen ruční práci z části nahradily moderní stroje. Základem výroby je netučný tvaroh, který zraje se solí. Poté se semele a vytvaruje do koleček, věnečků či tyčinek. Následně se nechávají tvarůžky několik dní zrát v sušárně. Poté jsou tvarůžky promyty, kdy dochází k omytí kvasinek na povrchu a může tak začít působit směs bakteriálních kultur. Na sušících roštech pak dochází k prozrání tvarůžků do hloubky. Z roštů jsou pak sesbírány do beden a uloženy do chladící místnosti, kde ještě jeden až dva dny dozrávají.
Historie
První zmínka o tvarůžcích pochází už z 15. století. Tehdy to ale byla pochoutka na vesnicích a později obyvatelé vesnic tyto tvarůžky prodávali na Olomouckých trzích – odtud také získali název Olomoucké tvarůžky. Na vesnicích se však dlouhou dobu držel název selské tvarůžky. Dnešní výrobu v Lošticích zahájil Josef Wessels se svým synem Aloisem v roce 1876. Výroba se rozšiřovala až do první světové války, kdy firma zaměstnávala 36 lidí a stala se největším výrobcem tvarůžků. V roce 1902 byla s podporou státu postavena Mlékařská škola v Kroměříži, která vychovávala odborníky do mlékáren a byla i výzkumným pracovištěm. Ve škole se pořádaly i kurzy pro tvarůžkářky a byla postavena „vzorová tvarůžkárna“. Po roce 1948 byla výrobna znárodněna a, jak uvádí firma (dnes vyrábějící tvarůžky),výroba tvarůžků dlouhodobě klesala, do technologie a zejména objektů tvarůžkárny se téměř neinvestovalo. V roce 1991 byla firma v restituci navrácena potomkům původních majitelů, kteří ihned zahájili výrobu. V roce 2010 tak tvarůžky získaly v rámci Evropské unie chráněné zeměpisné označení. Dnes má firma v Lošticích přes 130 zaměstnanců a ročně vyrobí přes dva tisíce tun tvarůžků.

What is „Tvaruzky“?
„Olomoucke Tvaruzky“ are also referred to as „syrečky“ or „tvargle“. The title „tvargle“ comes from a German title „Olmützler Quargel“. We are talking about a Moravian cheese, made from a defatted cottage cheese. „Tvaruzek“ is unmistakable thanks to its very specific smell, taste and its golden color. The surface is golden-yellow and sticky, the inside has a brighter color and a softer consistency. The name „Tvaruzek“ has its origin in „tvaroh“ (tvaroh = cottage cheese). Tvaroh is probably the most important ingredience for the production of this cheese.
How is it made?
Traditionally, „tvaruzky“ were made by woman, who were referred to as „pleskacky“. They used wooden tools called „klapacky“, which gave tvaruzky its rounded shape. The production method hasn’t really changed today, but the handwork was exchanged for machinework. The basis of the production is a fat-free cottage cheese, which ages together with salt. Then, it is grinded up and shaped into rounds, wreaths or bars. When this is done, tvaruzky are let to age in a drying room for a few days. Tvaruzky are then washed, this is when the yeast from the surface of the cheese is washed away. After this, the bacterial cultures can start affecting the cheese. Tvaruzky are fully aged on drying grates. Then they are collected, put into boxes and moved into a cooling room, where they are left to age again for a day or two.
The history of „Tvaruzky“
„Tvaruzky“ were first mentioned in the 15th century. Back then, it was delicacy in villages and later, villagers started to sell this cheese on the markets of Olomouc. That is also why they are called „Olomoucke tvaruzky“. However, the name was different amongst the villages – „selske tvaruzky“. The production in Lostice was started in 1876 by Josef Wessels and his son Alois. The production kept on expanding until the first world war, when the company had 36 employees and was the biggest producer of Tvaruzky. With the support from the state, Mlekarska skola (Dairy school) in Kromeriz was built. This school was built in 1902 and it educated dairy specialists. It even had a research facility. Courses for making the Tvaruzky cheese were also organized in the school. In 1948, the production was nationalized and, as the company states (the company is still producing Tvaruzky today), the production was steadily decreasing over time. Not much money was put into the technology and the facilities. In 1991, to company was returned to the hands of descendants of the former owners. These people then immediately started the production again. In 2010, Tvaruzky gained a protected geographical location from the EU. Today, the company in Lostice has over 130 employees and produces over two thousand tons of Tvaruzky per year.
