Os chafarizes encarregavam-se de abastecer de água a população de São Jorge. Diferenciavam-se na forma e no funcionamento. Continham poços a céu aberto, onde a água, se ia acumulando à mistura com folhas secas, terra e outros detritos trazidos pelo vento e pelo fundo dos cântaros e regadores. Era necessário limpar regularmente os chafarizes, tarefa executada pelas mulheres. Muitas vezes, existiam mesmo mulheres responsáveis por efectuar essa limpeza regularmente.
Junto dos chafarizes, existiam patamares de pedra onde os cântaros esperavam que as rodilhas fossem ajustadas, para que pudessem assentar bem na cabeça. Era uma tarefa feminina que requeria bastante equilíbrio.
Os chafarizes superavam as fontes, no que se refere à construção e limpeza, uma vez que consistem de uma torneira inserida numa parede trabalhada. Na maioria dos chafarizes, há um poço que servia para lavar roupa. Cada freguesia contém ou continha vários chafarizes que serviam para satisfazer as necessidades de população. Fazia parte das tarefas diárias ir buscar água ao chafariz para que as mães, ao chegarem do campo, tivessem água em casa para fazer a ceia. Hoje em dia, os chafarizes já não são utilizados como fonte de água, são mantidos e cuidados pelo seu valor histórico. Foram substituídos por canalizações que levam a água directamente às casas.
