Tuff is a catch all for many different kinds of volcanic rock.  Rock that is made from the ash and pyroclastic flows from a volcanoe.

Here are some of the options of the kind of Tuff that there is.

Volcanic Ash Tuff Just tiny particles of ash that form thick layers that are compressed to form a stone. The particles are less that 2mm in diameter

Breccas Tuff Where many tuffs are made up of just the ash.  This is one that has many particles of other stones.  They are not always the same diameter, size, and may not even be volcanic.  A volcanic explosion blowing a large amount of other material into the ash.

Crystal Tuffs  Sometimes the extreme heat will cause tuff and other material to melt and form crystals.

Welded Tuff  Sometimes the volcanic stones are all based on a large pyroclastic explosion.  Large amounts of stone are ejected and not ash.  That stone fuses together when it falls as it is still very hot. Fusing it together.

There are many other kinds as well, that are made up of various minerals and other materials.  Some are common and give it color red, brown, orange or rarely a green color.

In this place you see an outcrop that was used as part of one of the bases of an old building on the pony express trail.
